Purple Sprouting Broccoli & Wild Garlic Soup
Ingredients
3 tbsp Olive Oil
3 Chopped Spring Onions (Separate the white and green parts)
170g Chopped Sprouting Broccoli
500g Frozen Peas
40g Asparagus
75g Broad Beans
30g Wild Garlic
700ml Vegetable Stock
75ml Plant Based Cream
Parsley (Optional for topping)
Serves 4
Method
Heat a large saucepan and add 2 tablespoons of olive oil, Add the white spring onions, broccoli, peas, asparagus, beans, 3/4 of the wild garlic and the vegetable stock. Cook for around 5 minutes, then blend until smooth.
Stir in the cream. Taste and season as needded
Heat a tablespoon of oil in a separate small pan, frying the chopped green spring onion and remaining wild garlic for 2 minutes.
Serve the soup topped with the spring onion and garlic mix and croutons (optional),
