Purple Sprouting Broccoli & Wild Garlic Soup

Ingredients

  • 3 tbsp Olive Oil

  • 3 Chopped Spring Onions (Separate the white and green parts)

  • 170g Chopped Sprouting Broccoli

  • 500g Frozen Peas

  • 40g Asparagus

  • 75g Broad Beans

  • 30g Wild Garlic

  • 700ml Vegetable Stock

  • 75ml Plant Based Cream

  • Parsley (Optional for topping)

Serves 4


Method

  1. Heat a large saucepan and add 2 tablespoons of olive oil, Add the white spring onions, broccoli, peas, asparagus, beans, 3/4 of the wild garlic and the vegetable stock. Cook for around 5 minutes, then blend until smooth.

  2. Stir in the cream. Taste and season as needded

  3. Heat a tablespoon of oil in a separate small pan, frying the chopped green spring onion and remaining wild garlic for 2 minutes.

  4. Serve the soup topped with the spring onion and garlic mix and croutons (optional),
